Josh's father was a dog and was the one that chose his name, which is why he has a more human-like name. He never met his father because his mother had to stay with the pack. His mother was killed when he was very young because of the whole having a cub with a dog thing. He was kept alive because the pack didn't want to kill a defenceless cub.

Now, to explain the bird chained to his neck.... He's the scout for his pack, so he has the raven to help be his eyes. The raven--being a weaker demon-- was easily forced into submission so it won't strangle him. The raven demons see with heat so they are able to see through things like trees and what not. By being connected to Josh, he is able to channel what he sees to Josh.
Unlike most wolf-demon scouts, Josh became friends with his raven,and even gave it the name (although, not very creatvie) Karasu.
